Ingredients (~6-8 servings)

  • 3 Lbs Russet potatoes (about 4-6 medium-large)
  • 2 Medium onions, thinly sliced
  • 3-4 Tbsp neutral oil (canola, vegetable, or bacon grease)
  • 1 1/2 tsp paprika
  • 1 1/2 tsp salt (or to taste)
  • 3/4 tsp black pepper (or to taste)
  • 3/4 tsp onion powder
  • 3/4 tsp garlic powder

Partially Cook the Potatoes

You must use pre-cooked potatoes for this. You have two main options, and this can be done the day before.

Oven Method: Set your oven to ~375°F. Poke a few holes in the potatoes with a fork. Bake for ~45-50 minutes, or until a knife can easily pierce them.

Microwave Method: Poke holes in the potatoes. Place them on a plate and microwave for ~8-10 minutes, flipping halfway through, until a knife can easily pierce them.

Let the cooked potatoes cool completely, then cut them into slices or 1-inch chunks.

Fry the Onions and Potatoes

Get out a large cast-iron skillet or pan and add ~3 Tbsp of oil. Place the pan over medium-high heat.

If you cooked bacon, use the leftover bacon grease instead of the oil.

Toss in the sliced onions and sauté for ~3-4 minutes until they just begin to soften.

Add the sliced, par-cooked potatoes to the pan with the onions.

Sprinkle all the seasonings – the paprika, salt, pepper, onion powder, and garlic powder – evenly over the potatoes.

Use a spatula to gently stir and toss everything together so the potatoes get coated in the oil and spices.

Now, let the potatoes cook undisturbed for ~2-3 minutes to develop a crust.

Stir and toss, then let them sit again. Keep repeating this process for ~10-15 minutes.

You are looking for the onions and potatoes to get golden brown and crispy on the outside.

If the potatoes start to stick to the pan, add the additional tablespoon of oil.

Adjust and Serve

Take the pan off the heat. Taste a piece of potato and adjust the salt, pepper, or other seasonings to your liking.

Serve the home fries immediately.

The key to good home fries – crispy on the outside, creamy on the inside – is to use pre-cooked potatoes. Starting with raw potatoes in the pan often leads to them burning before the inside is cooked through.   • Cook until potatoes and onions are golden brown and crispy.
  • Add extra oil if potatoes start sticking.
  • Remove from heat and adjust seasonings to taste.
  • Serve immediately.

Notes

Bacon grease can be substituted for oil for extra flavor.
