Home Fries

The key to good home fries - crispy on the outside, creamy on the inside - is to use pre-cooked potatoes. Starting with raw potatoes in the pan often leads to them burning before the inside is cooked through. Using leftover baked or microwaved potatoes, specifically starchy Russets, is the easiest way to get that perfect diner-style texture.
