Garlic Aioli

Ingredients (~8 servings)

  • 1/2 cup mayonnaise
  • 1 Tbsp fresh lemon juice (plus more to taste)
  • 2 cloves garlic, minced
  • 1/4 tsp salt (plus more to taste)
  • Pinch of black pepper (plus more to taste)
  • Pinch of cayenne pepper (optional, to taste)

Mix Everything Together

In a small bowl, combine the mayo, lemon juice, minced garlic, salt, and black pepper.

Whisk everything together until well combined – the garlic will distribute more evenly if you really mix it in.

Taste and adjust with more salt, pepper, lemon juice, or a pinch of cayenne if you want some heat.

Let It Sit in the Fridge

Cover with plastic wrap or a tight lid and refrigerate for at least 30 minutes before serving.

The flavors really come together during this time and the garlic becomes less sharp.

This keeps in the fridge for up to a week – the lemon juice helps preserve it but the garlic flavor will get stronger over time.
