Garlic Aioli

This makes enough aioli to last you through the week - it's great on sandwiches, with roasted vegetables, or as a dip for fries. The garlic mellows out after sitting in the fridge for a bit.

Ingredients

Ingredients (~8 servings)

  • 1/2 cup mayonnaise
  • 1 Tbsp fresh lemon juice plus more to taste
  • 2 cloves garlic minced
  • 1/4 tsp salt plus more to taste
  • Pinch black pepper plus more to taste
  • Pinch cayenne pepper optional, to taste

Instructions

  • Combine mayonnaise, lemon juice, minced garlic, salt, and black pepper in a small bowl.
  • Whisk until well combined.
  • Taste and adjust seasoning with more salt, pepper, lemon juice, or cayenne if desired.
  • Cover and refrigerate for at least 30 minutes before serving.

Notes

Keeps refrigerated up to 1 week. Garlic flavor intensifies over time.
