French Style Hot Chocolate

Jump to recipe ▼

Ingredients (~4 large servings)

  • 4 cups whole milk
  • 14 oz bittersweet chocolate (at least 70% cacao), finely chopped
  • 1/4 cup brown sugar
  • A pinch of salt
  • Unsweetened whipped cream, for serving (optional)

Heat the Milk

Add the 4 cups of whole milk to a medium saucepan and place it over medium-high heat.

You must use a whisk, not a spoon, for this entire process. A whisk helps melt the chocolate evenly and aerates the milk slightly.

Stir the milk with the whisk for a few minutes until it heats up and just begins to steam and bubble at the edges. You want it just reaching the boiling point, around ~200-205F.

Pull the saucepan off the heat immediately.

Whisk in the Chocolate

Add all of the finely chopped chocolate to the hot milk at once. Let it sit for one minute to begin melting, then whisk continuously until the chocolate is completely melted and the mixture is smooth.

Return the saucepan to low heat. Add the brown sugar and the pinch of salt.

Continue to whisk over low heat for another minute or two. The hot chocolate will become noticeably thick.

Pour into cups and serve immediately, ideally with a spoonful of unsweetened whipped cream.

French Style Hot Chocolate

This is not the standard, watery hot chocolate made from a packet. French chocolat chaud is thick, rich, and has an intense chocolate flavor. It’s made by melting a large amount of high-quality dark chocolate directly into whole milk, which results in a drink that is almost like a pudding in consistency.
