French Style Hot Chocolate

This is not the standard, watery hot chocolate made from a packet. French chocolat chaud is thick, rich, and has an intense chocolate flavor. It's made by melting a large amount of high-quality dark chocolate directly into whole milk, which results in a drink that is almost like a pudding in consistency.

Ingredients

Ingredients (~4 large servings)

  • 4 cups whole milk
  • 14 oz bittersweet chocolate at least 70% cacao, finely chopped
  • 1/4 cup brown sugar
  • A pinch of salt
  • Unsweetened whipped cream optional, for serving

Instructions

  • Heat milk in medium saucepan over medium-high heat until steaming and just reaching boil.
  • Remove from heat and add chopped chocolate. Let sit 1 minute.
  • Whisk chocolate until completely melted and smooth.
  • Return to low heat. Add brown sugar and salt.
  • Whisk 1-2 minutes until thickened.
  • Pour into cups and top with whipped cream if desired.

Notes

Use a whisk for best texture and even melting.
