Ingredients (18 cookies)
- 1/2 cup + 2 Tbsp (113g) unsalted butter, melted
- 1/2 cup + 1 Tbsp (113g) packed light brown sugar
- 1/3 cup (67g) granulated sugar
- 1 large egg, room temperature
- 2 tsp vanilla extract
- 1 cup + 2 Tbsp (135g) all-purpose flour
- 1/3 cup (27g) unsweetened cocoa powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (135g) chopped chocolate or chocolate chips
Make the Dough and Chill for 1 Hour
Melt the butter and let it cool for about 5 minutes. In a medium bowl, whisk together the brown sugar and granulated sugar, then add the cooled, melted butter and whisk until combined.
Add the egg and vanilla extract and whisk until the mixture is smooth.
In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and fold them together with a spatula until just combined. Fold in the chocolate chips.
Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 1 hour.
Scoop and Bake at 350F for ~15 Minutes
When you’re ready to bake, preheat your oven to 350F and line a baking sheet with parchment paper.
Use a cookie scoop to make dough balls (~3 tablespoons each) and place them 2-3 inches apart on the prepared baking sheet.
Bake for ~14-16 minutes, until the edges are set. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
