Double Chocolate Chip Cookie Bars

Ingredients (12 servings)

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (40g) dark or Dutch-processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine sea salt
  • 3/4 cup (170g) unsalted butter, melted
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups (270g) semi-sweet chocolate chips

Combine the Ingredients

Preheat your oven to 350F. Line an 8×8 inch pan with parchment paper, leaving some overhang on the sides to make it easier to lift the bars out later.

In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.

In a separate large bowl, whisk the melted butter with the brown sugar and granulated sugar. Then, whisk in the eggs and vanilla extract until the mixture is smooth.

Add the dry ingredients to the wet ingredients and fold them together with a spatula until just a few streaks of flour are left. Add the chocolate chips and continue to fold until everything is combined and the flour streaks are gone.

Press Into the Pan and Bake for ~30 Minutes

The dough will be thick. Press it evenly into the bottom of the prepared pan.

Bake for ~28-32 minutes. The edges should look set, but the center might still seem slightly underdone – it will continue to firm up as it cools. Let the bars cool in the pan before lifting them out and slicing.

Instructions

  • Preheat oven to 350F. Line 8×8 inch pan with parchment paper, leaving overhang.
  • Whisk flour, cocoa powder, baking powder, and salt in medium bowl.
  • Whisk melted butter with both sugars in large bowl. Add eggs and vanilla, whisk until smooth.
  • Fold dry ingredients into wet mixture until nearly combined. Add chocolate chips and fold until just mixed.
  • Press dough evenly into prepared pan.
  • Bake 28-32 minutes until edges are set but center slightly underdone.
  • Cool completely in pan before lifting out and slicing.

Notes

Bars will continue to firm up while cooling. Store in airtight container up to 5 days.
