Double Chocolate Chip Cookie Bars

These are dense, fudgy, brownie-like cookie bars. The recipe is straightforward - the batter is mixed in one bowl, pressed into a pan, and baked. No chilling or scooping is required.

Ingredients

  • 2 cups all-purpose flour 250g
  • 1/2 cup dark or Dutch-processed cocoa powder 40g
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine sea salt
  • 3/4 cup unsalted butter 170g, melted
  • 1 cup brown sugar 200g, packed
  • 1/2 cup granulated sugar 100g
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips 270g

Instructions

  • Preheat oven to 350F. Line 8x8 inch pan with parchment paper, leaving overhang.
  • Whisk flour, cocoa powder, baking powder, and salt in medium bowl.
  • Whisk melted butter with both sugars in large bowl. Add eggs and vanilla, whisk until smooth.
  • Fold dry ingredients into wet mixture until nearly combined. Add chocolate chips and fold until just mixed.
  • Press dough evenly into prepared pan.
  • Bake 28-32 minutes until edges are set but center slightly underdone.
  • Cool completely in pan before lifting out and slicing.

Notes

Bars will continue to firm up while cooling. Store in airtight container up to 5 days.
