Chewy Sugar Cookies

Ingredients (~18 Cookies)

  • 2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp kosher salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar, divided
  • 1 large egg
  • 1 1/2 tsp vanilla extract

Combine the Dry Ingredients

In a large bowl, whisk together the flour, baking soda, baking powder, and salt. This ensures the leavening agents are evenly distributed. Set the bowl aside.

Cream the Butter and Sugar

In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric hand mixer, cream the softened butter and 1 cup of the granulated sugar.

Beat on medium speed for 3-4 minutes until the mixture is light in color and fluffy in texture.

Add the Egg and Vanilla

Beat in the egg and vanilla extract until they are just combined. Scrape down the sides of the bowl to ensure everything is incorporated.

Mix and Chill the Dough

With the mixer on low speed, slowly add the dry ingredients to the wet ingredients. Mix just until a soft dough forms.

Avoid overmixing, which can make the cookies tough.

Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour. This is an important step to control spreading and develop the cookie’s chewy texture.

Roll and Bake the Cookies

Preheat your oven to 350°F. Line a baking sheet with parchment paper.

Place the remaining 1/2 cup of granulated sugar in a small, shallow bowl.

Scoop the chilled dough and roll it into balls, about 1 1/2 inches in diameter.

Roll each dough ball in the sugar until it’s completely coated. This will create a crunchy exterior.

Place the sugar-coated dough balls on the prepared baking sheet, leaving about 2 inches of space between them.

Bake for 9-11 minutes. The cookies are done when the edges are lightly golden and the centers are just set. They might look slightly underbaked, but they will continue to bake on the hot pan.

Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

Cookies will look slightly underbaked when done but will continue setting on hot pan.
