Instructions
Whisk flour, baking soda, baking powder, and salt in a large bowl.
Cream butter and 1 cup sugar until light and fluffy, about 3-4 minutes.
Beat in egg and vanilla extract until just combined.
Mix dry ingredients into wet ingredients on low speed until soft dough forms.
Chill dough covered for 1 hour.
Preheat oven to 350°F and line baking sheet with parchment.
Roll dough into 1.5-inch balls, coat in remaining sugar.
Place on baking sheet 2 inches apart.
Bake 9-11 minutes until edges are golden and centers are just set.
Cool on baking sheet 5 minutes, then transfer to wire rack.
Notes
Cookies will look slightly underbaked when done but will continue setting on hot pan.
