Chewy Sugar Cookies

These sugar cookies have a classic soft and chewy texture with a crisp, sugary exterior. The recipe is straightforward and requires just an hour of chilling time.

Ingredients

Ingredients (~18 Cookies)

  • 2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp kosher salt
  • 3/4 cup unsalted butter 1 1/2 sticks, softened
  • 1 1/2 cups granulated sugar divided
  • 1 large egg
  • 1 1/2 tsp vanilla extract

Instructions

  • Whisk flour, baking soda, baking powder, and salt in a large bowl.
  • Cream butter and 1 cup sugar until light and fluffy, about 3-4 minutes.
  • Beat in egg and vanilla extract until just combined.
  • Mix dry ingredients into wet ingredients on low speed until soft dough forms.
  • Chill dough covered for 1 hour.
  • Preheat oven to 350°F and line baking sheet with parchment.
  • Roll dough into 1.5-inch balls, coat in remaining sugar.
  • Place on baking sheet 2 inches apart.
  • Bake 9-11 minutes until edges are golden and centers are just set.
  • Cool on baking sheet 5 minutes, then transfer to wire rack.

Notes

Cookies will look slightly underbaked when done but will continue setting on hot pan.
