Buffalo Chicken Bites

Ingredients (~6 servings)

  • 3 lbs chicken breasts, cut into 2-inch pieces
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 Tbsp olive oil
  • 4 Tbsp salted butter
  • 1 1/4 cups buffalo sauce (like Frank’s Red Hot)
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • Celery ribs, cut into 3-inch pieces, for serving
  • Blue cheese dressing for serving

Season and Brown the Chicken

Pat the chicken pieces dry and season all over with the salt and pepper.

Heat the olive oil in a large skillet over medium-high heat. Once the oil starts to shimmer, add the chicken in batches – don’t overcrowd the pan.

Cook for ~3-4 minutes until lightly browned, then flip and cook another ~3-4 minutes until cooked through. The pieces should hit ~165F internal.

Remove the first batch and repeat with remaining chicken if needed.

Make the Buffalo Sauce and Coat

Reduce the heat to low and add all the chicken back to the pan.

Add the butter, buffalo sauce, garlic powder, and onion powder. Stir everything together until each piece is coated in the sauce.

The butter will melt and combine with the buffalo sauce to create that classic wing coating.

Serve with Celery and Blue Cheese

Serve immediately with celery sticks and blue cheese dressing on the side.

The celery helps cut through all that buffalo heat and the blue cheese dressing cools everything down.

Notes
