Buffalo Chicken Bites

These are way easier than wings and you get all the buffalo flavor without dealing with oil or bones. Perfect for when you want something that actually fills you up.

Ingredients

Ingredients (~6 servings)

  • 3 lbs chicken breasts cut into 2-inch pieces
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 Tbsp olive oil
  • 4 Tbsp salted butter
  • 1 1/4 cups buffalo sauce like Frank's Red Hot
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • Celery ribs cut into 3-inch pieces, for serving
  • Blue cheese dressing for serving

Instructions

  • Pat chicken dry and season with salt and pepper.
  • Heat olive oil in skillet over medium-high heat.
  • Brown chicken in batches 3-4 minutes per side until internal temp reaches 165F.
  • Reduce heat to low and return all chicken to pan.
  • Add butter, buffalo sauce, garlic powder, and onion powder. Stir to coat.
  • Serve hot with celery sticks and blue cheese dressing.

Notes

Work in batches to avoid overcrowding pan and ensure even browning.
