Ingredients (~4 large servings)
- 4 cups whole milk
- 14 oz bittersweet chocolate (at least 70% cacao), finely chopped
- 1/4 cup brown sugar
- A pinch of salt
- Unsweetened whipped cream, for serving (optional)
Heat the Milk
Add the 4 cups of whole milk to a medium saucepan and place it over medium-high heat.
You must use a whisk, not a spoon, for this entire process. A whisk helps melt the chocolate evenly and aerates the milk slightly.
Stir the milk with the whisk for a few minutes until it heats up and just begins to steam and bubble at the edges. You want it just reaching the boiling point, around ~200-205F.
Pull the saucepan off the heat immediately.
Whisk in the Chocolate
Add all of the finely chopped chocolate to the hot milk at once. Let it sit for one minute to begin melting, then whisk continuously until the chocolate is completely melted and the mixture is smooth.
Return the saucepan to low heat. Add the brown sugar and the pinch of salt.
Continue to whisk over low heat for another minute or two. The hot chocolate will become noticeably thick.
Pour into cups and serve immediately, ideally with a spoonful of unsweetened whipped cream.

French Style Hot Chocolate

Instructions
- Heat milk in medium saucepan over medium-high heat until steaming and just reaching boil.
- Remove from heat and add chopped chocolate. Let sit 1 minute.
- Whisk chocolate until completely melted and smooth.
- Return to low heat. Add brown sugar and salt.
- Whisk 1-2 minutes until thickened.
- Pour into cups and top with whipped cream if desired.
