Roasted Zucchini with Parmesan

Ingredients (~6 servings)

  • 3 medium zucchini, cut into 1/2-inch-thick rounds
  • 3 Tbsp extra-virgin olive oil
  • 3/4 tsp sea salt, plus more to taste
  • 3/4 tsp freshly cracked black pepper
  • 1 1/2 tsp garlic powder
  • 3/4 cup grated Parmesan cheese

Get Your Oven to 450F and Prep the Zucchini

Put a rack in the center position and preheat to 450F.

In a large bowl, toss the zucchini rounds with the olive oil, salt, pepper, and garlic powder.

Make sure all the pieces get coated – the oil is what’s going to help them crisp up.

Arrange on Sheet Pan and Top with Parmesan

Spread the zucchini on a rimmed sheet pan in a single layer – don’t overcrowd or they’ll steam instead of roast.

Sprinkle the Parmesan cheese evenly over the top.

The cheese will melt and get golden, creating a crispy coating.

Roast for 5 Minutes Then Broil to Finish

Bake for 5 minutes first to get the zucchini cooking.

Turn the oven broiler to high and continue cooking for ~2-3 more minutes until the cheese is golden brown and the zucchini feels tender when you poke it with a fork.

The edges should look slightly caramelized and the Parmesan should be bubbly.

Roasted Zucchini with Parmesan

This is dead simple and cooks wicked fast – probably the easiest way to use up zucchini when you have too much. The high heat gets the edges crispy while keeping the inside tender.

  • Bake for 5 minutes.
  • Switch to broiler and cook 2-3 minutes until cheese is golden and zucchini is tender.

Notes

Watch carefully under broiler to prevent burning.
