Roasted Zucchini with Parmesan

This is dead simple and cooks wicked fast - probably the easiest way to use up zucchini when you have too much. The high heat gets the edges crispy while keeping the inside tender.

Ingredients

Ingredients (~6 servings)

  • 3 medium zucchini cut into 1/2-inch-thick rounds
  • 3 Tbsp extra-virgin olive oil
  • 3/4 tsp sea salt plus more to taste
  • 3/4 tsp freshly cracked black pepper
  • 1 1/2 tsp garlic powder
  • 3/4 cup grated Parmesan cheese

Instructions

  • Preheat oven to 450F with rack in center position.
  • Toss zucchini rounds with olive oil, salt, pepper, and garlic powder in large bowl.
  • Spread zucchini in single layer on rimmed sheet pan.
  • Sprinkle Parmesan cheese evenly over zucchini.
  • Bake for 5 minutes.
  • Switch to broiler and cook 2-3 minutes until cheese is golden and zucchini is tender.

Notes

Watch carefully under broiler to prevent burning.
