Roasted Zucchini with Parmesan
This is dead simple and cooks wicked fast - probably the easiest way to use up zucchini when you have too much. The high heat gets the edges crispy while keeping the inside tender.

Ingredients

medium zucchini
cut into 1/2-inch-thick rounds

extra-virgin olive oil

sea salt
plus more to taste

freshly cracked black pepper

garlic powder

grated Parmesan cheese
Instructions
Preheat oven to 450F with rack in center position.
Toss zucchini rounds with olive oil, salt, pepper, and garlic powder in large bowl.
Spread zucchini in single layer on rimmed sheet pan.
Sprinkle Parmesan cheese evenly over zucchini.
Bake for 5 minutes.
Switch to broiler and cook 2-3 minutes until cheese is golden and zucchini is tender.
Notes
Watch carefully under broiler to prevent burning.
