Ingredients (8 servings)
- 200g (one 7-oz tube or half a 14-oz can) sweetened condensed milk
- 170g (6 oz) semi-sweet or dark chocolate, finely chopped
- 1/2 tsp vanilla extract
- Flaky sea salt, for finishing (optional)
Melt the Chocolate and Condensed Milk
Line a loaf pan with parchment paper, leaving some overhang on the sides to use as handles later.
Place the finely chopped chocolate and the sweetened condensed milk in a medium saucepan. Set the pot over low-medium heat and stir constantly with a spatula until the chocolate is completely melted and the mixture is smooth.
Watch the heat carefully to avoid scorching the chocolate at the bottom of the pan – if it gets too hot, the chocolate can seize and become grainy.
Stir in Vanilla and Let it Set
Remove the pan from the heat and stir in the vanilla extract.
Pour the fudge into the prepared pan and spread it into an even layer. If you’re using it, sprinkle the top with flaky sea salt.
Let the fudge set in the refrigerator for at least one hour, or until it’s firm. Once it’s set, use the parchment paper handles to lift it out of the pan and slice it into squares.
