Chunky Guacamole

Ingredients (~6 servings)

  • 3 large ripe avocados (preferably Haas)
  • 1 small yellow onion, finely chopped (~1/2 cup)
  • 1 jalapeño pepper, seeds and ribs removed, finely diced
  • 1 medium tomato, seeds removed and finely diced
  • 1 to 2 cloves garlic, minced or pressed
  • 3 Tbsp finely chopped fresh cilantro
  • 2 to 3 Tbsp fresh lime juice, to taste
  • 1/2 tsp ground cumin
  • 1/2 to 3/4 tsp kosher salt, to taste
  • 1/4 tsp ground chipotle pepper (optional)

Prep the Avocados and Get Your Base

Cut the avocados in half lengthwise and twist to separate. Remove the pits and scoop the flesh into a large mixing bowl.

Mash with a fork until broken down but still chunky – you want some texture here, not baby food.

The avocado should hold the other ingredients together but you should still get distinct pieces when you scoop it.

Add Everything Else and Fold Together

Add the onion, tomato, jalapeño, garlic, and cilantro to the bowl.

Pour in 2 Tbsp of lime juice and sprinkle with the cumin, salt (start with 1/2 tsp), and ground chipotle if using.

Gently fold everything together just until combined – don’t overmix or you’ll turn it into a paste.

Taste and adjust with additional salt (I usually end up using the full 3/4 tsp) and the remaining lime juice.

The lime juice is key here; it brightens everything up and slows down the browning.

Serve immediately, or cover tightly and refrigerate until ready to serve.

Chunky Guacamole

This guac hits the right balance – mashed enough to hold together but chunky enough that you get distinct bites of avocado, tomato, and onion. I always go heavy on the lime juice since it keeps everything bright and prevents browning.

  • Taste and adjust with additional salt and lime juice as needed.
  • Serve immediately or cover tightly and refrigerate until ready to serve.

Notes

Lime juice brightens flavor and slows browning.
