Chunky Guacamole

This guac hits the right balance - mashed enough to hold together but chunky enough that you get distinct bites of avocado, tomato, and onion. I always go heavy on the lime juice since it keeps everything bright and prevents browning.
prep time:10 minutes
total time:10 minutes

Ingredients

Ingredients (~6 servings)

  • 3 large ripe avocados preferably Haas
  • 1 small yellow onion ~1/2 cup, finely chopped
  • 1 jalapeño pepper seeds and ribs removed, finely diced
  • 1 medium tomato seeds removed and finely diced
  • 1 to 2 cloves garlic minced or pressed
  • 3 Tbsp finely chopped fresh cilantro
  • 2 to 3 Tbsp fresh lime juice to taste
  • 1/2 tsp ground cumin
  • 1/2 to 3/4 tsp kosher salt to taste
  • 1/4 tsp ground chipotle pepper optional

Instructions

  • Cut avocados in half, remove pits, and scoop flesh into a bowl.
  • Mash with a fork until chunky but not smooth.
  • Add onion, tomato, jalapeño, garlic, and cilantro to the bowl.
  • Add 2 Tbsp lime juice, cumin, 1/2 tsp salt, and chipotle pepper if using.
  • Gently fold everything together until just combined.
  • Taste and adjust with additional salt and lime juice as needed.
  • Serve immediately or cover tightly and refrigerate until ready to serve.

Notes

Lime juice brightens flavor and slows browning.
