Ingredients (18 large cookies)
- 2 cups (250g) all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1 cup (226g) unsalted butter, room temperature
- 1 cup + 2 Tbsp (225g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 1 cup (260g) creamy peanut butter
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 3/4 cup (64g) old-fashioned oats
- 1/2 cup + 2 Tbsp (100g) chocolate chips
- 3/4 cup (150g) M&Ms
Mix the Dough and Chill for at Least 1 Hour
In a medium bowl, whisk together the all-purpose flour, baking powder, and baking soda.
In a separate large bowl, beat the room temperature butter with the brown and granulated sugars until the mixture is light and fluffy; this will take ~2-3 minutes with a mixer. Add the peanut butter and beat until it’s combined. Then, mix in the eggs and vanilla extract.
Add the dry ingredients to the wet ingredients and mix on low speed until a dough forms. Fold in the oats, followed by the chocolate chips and M&Ms. Cover the bowl and chill the dough for at least one hour.
Scoop and Bake at 375F for ~15 Minutes
When the dough is almost done chilling, preheat your oven to 375F and line a baking sheet with parchment paper.
Scoop the chilled dough into large balls, about 1/4 cup each, and place them 3-4 inches apart on the prepared baking sheet.
Bake for ~14-15 minutes until the edges of the cookies are set and golden brown. Let them cool on the pan for 5 minutes before moving them to a wire rack.
