- 2 1/4 cups (281g) all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cups (250g) granulated sugar
- 2 large eggs, room temperature
- 1 Tbsp vanilla extract
- 1/2 cup (100ml) vegetable oil
- 1/3 cup (80g) plain yogurt, room temperature
- 1/4 cup (60ml) whole milk, room temperature
- 1/4 cup (40g) rainbow sprinkles, plus more for topping
Make the Batter and Bake at 350F for ~1 Hour
Preheat your oven to 350F. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides to lift the loaf out later.
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
In a separate large bowl, whisk the granulated sugar and eggs together. Add the vanilla extract, vegetable oil, yogurt, and milk, and whisk until the mixture is smooth.
Add the dry ingredients to the wet ingredients and fold them together with a spatula until just combined; a few small lumps are fine. Gently fold in the sprinkles.
Pour the batter into the prepared pan and top with more sprinkles. Bake for ~55-60 minutes, or until a toothpick inserted into the center comes out clean. If the top of the loaf starts browning too quickly, you can tent it with foil.
Let the loaf cool in the pan for about 10 minutes before using the parchment overhang to lift it out and transfer it to a wire rack to cool completely.

Instructions
- Preheat oven to 350F and line 9×5-inch loaf pan with parchment paper.
- Whisk together flour, baking soda, and salt in medium bowl.
- In large bowl, whisk sugar and eggs, then add vanilla, oil, yogurt, and milk until smooth.
- Fold dry ingredients into wet ingredients until just combined, then gently fold in sprinkles.
- Pour batter into pan, top with additional sprinkles.
- Bake 55-60 minutes until toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
