Sugar Cookie Loaf
This is a dense, moist loaf cake with the flavor of a classic sugar cookie, complete with rainbow sprinkles. The batter is oil-based, so it comes together quickly without a mixer.

Instructions
Preheat oven to 350F and line 9x5-inch loaf pan with parchment paper.
Whisk together flour, baking soda, and salt in medium bowl.
In large bowl, whisk sugar and eggs, then add vanilla, oil, yogurt, and milk until smooth.
Fold dry ingredients into wet ingredients until just combined, then gently fold in sprinkles.
Pour batter into pan, top with additional sprinkles.
Bake 55-60 minutes until toothpick comes out clean.
Cool in pan 10 minutes, then transfer to wire rack to cool completely.
Notes
Tent with foil if top browns too quickly during baking.
