Sugar Cookie Loaf

This is a dense, moist loaf cake with the flavor of a classic sugar cookie, complete with rainbow sprinkles. The batter is oil-based, so it comes together quickly without a mixer.

Ingredients

Ingredients (10 slices)

  • 2 1/4 cups all-purpose flour 281g
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cups granulated sugar 250g
  • 2 large eggs room temperature
  • 1 Tbsp vanilla extract
  • 1/2 cup vegetable oil 100ml
  • 1/3 cup plain yogurt 80g, room temperature
  • 1/4 cup whole milk 60ml, room temperature
  • 1/4 cup rainbow sprinkles 40g, plus more for topping

Instructions

  • Preheat oven to 350F and line 9x5-inch loaf pan with parchment paper.
  • Whisk together flour, baking soda, and salt in medium bowl.
  • In large bowl, whisk sugar and eggs, then add vanilla, oil, yogurt, and milk until smooth.
  • Fold dry ingredients into wet ingredients until just combined, then gently fold in sprinkles.
  • Pour batter into pan, top with additional sprinkles.
  • Bake 55-60 minutes until toothpick comes out clean.
  • Cool in pan 10 minutes, then transfer to wire rack to cool completely.

Notes

Tent with foil if top browns too quickly during baking.
