Brown Butter Oreo Rice Krispie Treats

Ingredients (12 servings)

  • 85g (6 Tbsp) unsalted butter
  • 1 1/2 Tbsp instant dry milk powder
  • 255g (a 10 oz bag) mini marshmallows
  • 3/4 tsp salt
  • 3/4 tsp vanilla extract
  • 100g (3 3/4 cups) Rice Krispies cereal
  • 15 Oreos, roughly chopped

Brown the Butter

Line an 8×8-inch pan with parchment paper.

In a large pot, melt the butter over medium heat. It will foam up and sizzle for a few minutes. Once the sizzling calms down, whisk in the dry milk powder. Continue to cook, swirling the pan every few seconds, until you see golden-brown specks form and the butter smells nutty.

Melt the Marshmallows and Mix

Immediately turn off the heat and add all the marshmallows to the pot. Stir to coat them in the hot butter; this will keep the butter from burning. Let them sit and soften for about a minute.

Turn the heat back on to low. Add the salt and vanilla, and stir until the marshmallows are just melted and smooth. Don’t let the mixture boil or the treats will be hard.

Remove the pot from the heat. Add the cereal and 11 of the chopped Oreos. Use a spatula to fold everything together until it’s all coated in the marshmallow mixture.

Press and Set for One Hour

Pour the mixture into the prepared pan. Gently press it into an even layer – packing it down too firmly will make the treats dense. Scatter the remaining 4 chopped Oreos over the top.

Let the treats cool and set at room temperature for at least one hour before slicing.

  • Melt butter in large pot over medium heat until foamy. Whisk in milk powder and cook until golden-brown and nutty.
  • Add marshmallows, turn off heat, and stir to coat. Let soften 1 minute.
  • Turn heat to low. Add salt and vanilla. Stir until marshmallows are just melted.
  • Remove from heat. Fold in cereal and most chopped Oreos until coated.
  • Pour into pan and press gently into even layer. Top with remaining Oreos.
  • Let set at room temperature 1 hour before slicing.

Notes

Do not pack mixture too firmly or boil marshmallows, as this will make treats hard.
