Mini Egg Cookies

These cookies are loaded with Cadbury mini eggs and chocolate chips – perfect for using up Easter candy. The mini eggs get slightly melty when you press them on top right after baking.

Ingredients (~12 cookies)

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 Tbsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1/4 cup white chocolate chips
  • 1/4 cup semi-sweet chocolate chips
  • 1/2 cup mini Cadbury eggs (broken into pieces)
  • Extra mini eggs for topping

Mix the Wet Ingredients

Preheat your oven to 375F and line a baking sheet with parchment paper.

Place the 1/2 cup butter and both sugars in a stand mixer with the paddle attachment; beat on medium-high speed for ~3-4 minutes until light and fluffy.

Add the 1 egg and mix on low speed until smooth, then beat in the 1/2 Tbsp vanilla.

Add the Dry Ingredients and Mix-ins

Slowly mix in the 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1 1/2 cups flour – being careful not to overmix.

Stop when you still have some flour remnants around the bowl.

Chop the Mini Eggs and Fold Everything Together

Chop up the 1/2 cup mini Cadbury eggs into pieces but not too small – you want chunks that are visible in the cookies.

Add the chopped eggs, 1/4 cup white chocolate chips, and 1/4 cup semi-sweet chocolate chips; stir until just combined.

Scoop and Bake the Cookies

Scoop the dough into ~3 Tbsp portions and place on your prepared baking sheet with space between each cookie.

Bake for ~12 minutes or until the edges start to turn golden brown.

As soon as they come out of the oven, press a few mini eggs on top of each cookie while they’re still hot – the eggs will get slightly melty and stick perfectly.

Allow to cool on the baking sheet for ~5 minutes before transferring.

  • Scoop dough into 3 Tbsp portions and place on baking sheet with space between.
  • Bake for 12 minutes until edges turn golden brown.
  • Immediately press extra mini eggs on top of hot cookies.
  • Cool on baking sheet for 5 minutes before transferring.

Notes

Makes approximately 12 cookies.
