Mini Egg Cookies
These cookies are loaded with Cadbury mini eggs and chocolate chips - perfect for using up Easter candy. The mini eggs get slightly melty when you press them on top right after baking.

Instructions
Preheat oven to 375F and line a baking sheet with parchment paper.
Beat 1/2 cup butter, 1/2 cup brown sugar, and 1/2 cup granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
Add 1 large egg and mix on low until smooth, then beat in 1/2 Tbsp vanilla.
Slowly mix in 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1 1/2 cups all-purpose flour until some flour remnants remain.
Chop 1/2 cup mini Cadbury eggs into visible chunks.
Add chopped eggs, 1/4 cup white chocolate chips, and 1/4 cup semi-sweet chocolate chips and stir until just combined.
Scoop dough into 3 Tbsp portions and place on baking sheet with space between.
Bake for 12 minutes until edges turn golden brown.
Immediately press extra mini eggs on top of hot cookies.
Cool on baking sheet for 5 minutes before transferring.
