Mini Egg Cookies

These cookies are loaded with Cadbury mini eggs and chocolate chips - perfect for using up Easter candy. The mini eggs get slightly melty when you press them on top right after baking.

Ingredients

Ingredients (~12 cookies)

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 Tbsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1/4 cup white chocolate chips
  • 1/4 cup semi-sweet chocolate chips
  • 1/2 cup mini Cadbury eggs broken into pieces
  • Extra mini eggs for topping

Instructions

  • Preheat oven to 375F and line a baking sheet with parchment paper.
  • Beat 1/2 cup butter, 1/2 cup brown sugar, and 1/2 cup granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  • Add 1 large egg and mix on low until smooth, then beat in 1/2 Tbsp vanilla.
  • Slowly mix in 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1 1/2 cups all-purpose flour until some flour remnants remain.
  • Chop 1/2 cup mini Cadbury eggs into visible chunks.
  • Add chopped eggs, 1/4 cup white chocolate chips, and 1/4 cup semi-sweet chocolate chips and stir until just combined.
  • Scoop dough into 3 Tbsp portions and place on baking sheet with space between.
  • Bake for 12 minutes until edges turn golden brown.
  • Immediately press extra mini eggs on top of hot cookies.
  • Cool on baking sheet for 5 minutes before transferring.

Makes approximately 12 cookies.
