Slow Cooker Ham and Potato Soup

Ingredients (~8 servings)

  • 1 large carrot, peeled and chopped
  • 3 stalks celery, chopped
  • 1/2 medium onion, chopped (~1/2 cup)
  • 1 1/2 lbs ham, cut into small pieces
  • ~4 lbs Russet potatoes, peeled and diced
  • 4 cloves garlic, minced
  • 3/4 tsp Italian seasoning
  • 6 cups chicken broth
  • 3 cups water
  • Salt and pepper to taste

Add Everything to the Slow Cooker

Toss all ingredients except salt and pepper into your slow cooker.

Cover and cook on low for 6-8 hours or high for 3-4 hours.

You want the potatoes to be fall-apart tender – they should break up easily when you press them with a spoon.

Mash Some of the Potatoes to Thicken

Using a potato masher, lightly mash about half the potatoes right in the slow cooker.

I like a mix where some potato pieces are still intact but enough are mashed to naturally thicken the broth.

The starch from the broken-down potatoes creates that creamy base without needing any flour or cream.

Season with salt and pepper – you’ll likely need a good amount of salt since potatoes soak it up.

Serve immediately while hot.

Instructions

  • Add carrot, celery, onion, ham, potatoes, garlic, Italian seasoning, chicken broth, and water to slow cooker.
  • Cover and cook on low for 6-8 hours until potatoes are fall-apart tender.
  • Mash about half the potatoes in the slow cooker with a potato masher to thicken the soup.
  • Season with salt and pepper to taste.
  • Serve hot.
