Ingredients (~8 servings)
- 1 large carrot, peeled and chopped
- 3 stalks celery, chopped
- 1/2 medium onion, chopped (~1/2 cup)
- 1 1/2 lbs ham, cut into small pieces
- ~4 lbs Russet potatoes, peeled and diced
- 4 cloves garlic, minced
- 3/4 tsp Italian seasoning
- 6 cups chicken broth
- 3 cups water
- Salt and pepper to taste
Add Everything to the Slow Cooker
Toss all ingredients except salt and pepper into your slow cooker.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
You want the potatoes to be fall-apart tender – they should break up easily when you press them with a spoon.
Mash Some of the Potatoes to Thicken
Using a potato masher, lightly mash about half the potatoes right in the slow cooker.
I like a mix where some potato pieces are still intact but enough are mashed to naturally thicken the broth.
The starch from the broken-down potatoes creates that creamy base without needing any flour or cream.
Season with salt and pepper – you’ll likely need a good amount of salt since potatoes soak it up.
Serve immediately while hot.

Slow Cooker Ham and Potato Soup

Instructions
- Add carrot, celery, onion, ham, potatoes, garlic, Italian seasoning, chicken broth, and water to slow cooker.
- Cover and cook on low for 6-8 hours until potatoes are fall-apart tender.
- Mash about half the potatoes in the slow cooker with a potato masher to thicken the soup.
- Season with salt and pepper to taste.
- Serve hot.
