Slow Cooker Ham and Potato Soup
This is one of those set-it-and-forget-it soups that's perfect for cold days. The slow cooker breaks down the potatoes naturally to thicken the broth, and you end up with a hearty soup that tastes like it simmered all day.

Ingredients
Ingredients (~8 servings)

peeled and chopped

medium onion
~1/2 cup, chopped

ham
cut into small pieces

~4 lbs Russet potatoes
peeled and diced

garlic

Italian seasoning

chicken broth
▢

Salt and pepper to taste
Instructions
Add carrot, celery, onion, ham, potatoes, garlic, Italian seasoning, chicken broth, and water to slow cooker.
Cover and cook on low for 6-8 hours until potatoes are fall-apart tender.
Mash about half the potatoes in the slow cooker with a potato masher to thicken the soup.
Season with salt and pepper to taste.
Serve hot.
