Ingredients (~8 servings)
- 1 can (14 oz) coconut milk, shaken
- 1 1/4 cups water
- 1/2 tsp sea salt
- 1 Tbsp sugar
- 2 cups long-grain white rice, rinsed
Combine Coconut Milk, Water, Salt and Sugar
In a medium saucepan, stir together the coconut milk, water, salt, and sugar.
Bring to a boil over medium-high heat – this usually takes ~3-4 minutes.
The coconut milk might look separated at first but it’ll come together once it heats up.
Add Rice and Cook Until Tender
Stir in the rinsed rice and return to a boil.
Once boiling, reduce the heat to low, cover with a lid, and cook for ~18 minutes.
You’ll know it’s done when the rice is tender and all the liquid has been absorbed.
Fluff and Rest Before Serving
Remove the lid and fluff the rice with a fork.
Turn off the heat but leave the pan on the hot burner for another 2-3 minutes.
This final rest helps the rice finish steaming and prevents it from being sticky.

- Remove lid and fluff rice with a fork.
- Let sit on hot burner for 2-3 minutes before serving.
