Coconut Rice

I grew up on plain white rice but this is way better - it's barely sweet, super fluffy, and takes the same amount of time. You'll probably start making this instead of regular rice once you try it.

Ingredients

Ingredients (~8 servings)

  • 1 can coconut milk 14 oz, shaken
  • 1 1/4 cups water
  • 1/2 tsp sea salt
  • 1 Tbsp sugar
  • 2 cups long-grain white rice rinsed

Instructions

  • Combine coconut milk, water, salt, and sugar in a medium saucepan.
  • Bring to a boil over medium-high heat.
  • Stir in rinsed rice and return to a boil.
  • Reduce heat to low, cover, and cook for 18 minutes.
  • Remove lid and fluff rice with a fork.
  • Let sit on hot burner for 2-3 minutes before serving.

Notes

Shake coconut milk can before using to ensure even mixing.
