Hearty Beef Chili

Ingredients (~6-8 servings)

  • 2 lbs ground beef (or turkey)
  • 1 1/2 Tbsp butter
  • 1 small yellow onion, diced
  • 1/2 cup red bell pepper, diced
  • 4-6 cloves garlic, minced
  • 2 roma tomatoes, seeds removed and diced
  • 1/4 cup tomato paste
  • 2 cups chicken or beef broth
  • 3 cups water
  • 2 cups canned beans (black or kidney), rinsed and drained

Chili Seasoning Blend

  • 1 1/2 Tbsp + 1 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp cayenne pepper

For Garnish

  • Sour cream
  • Grated cheddar cheese

Brown the Meat and Aromatics

In a large skillet or Dutch oven, heat the pan over medium-high heat. Add the ground meat and break it apart with a wooden spoon. Add the entire chili seasoning blend and cook until the meat is browned through.

Set a colander over a large bowl and drain the cooked meat. Set the meat aside.

Lower the heat to medium and add the butter to the same skillet. Once melted, add the diced onion and red pepper. Sauté for ~3-4 minutes until softened.

Add the minced garlic and diced tomato, stirring for another ~2-3 minutes until fragrant. Stir in the tomato paste and cook for 2-3 minutes, letting it darken slightly.

Simmer the Chili

Pour in the broth and water, stirring to combine. Add the drained meat and the rinsed beans back into the pot.

Bring the heat up to medium-high and let the chili come to a simmer. Cook for at least 20 minutes, or until the liquid has reduced and thickened to your liking.

Take the pot off the heat and let the chili cool for a few minutes before serving. Garnish with sour cream and shredded cheese.

Hearty Beef Chili

A good bowl of hot chili doesn’t need to be over-complicated. This recipe builds its flavor in stages, first browning the meat with all the seasonings, then separately cooking the aromatics. Draining the seasoned meat after browning is the most important step; it keeps all the flavor from the spices but gets rid of the grease.

Instructions

  • Brown ground beef with chili seasoning in large skillet over medium-high heat.
  • Drain meat and set aside.
  • Sauté onions and peppers in butter for 3-4 minutes.
  • Add garlic and tomatoes, cook 2-3 minutes.
  • Stir in tomato paste and cook until darkened.
  • Pour in broth and water, add meat and beans.
  • Simmer 20 minutes until liquid reduces.
  • Top with sour cream and cheese before serving.

Notes

Can substitute turkey for beef. Adjust spice level by reducing cayenne pepper.
