Hearty Beef Chili

A good bowl of hot chili doesn't need to be over-complicated. This recipe builds its flavor in stages, first browning the meat with all the seasonings, then separately cooking the aromatics. Draining the seasoned meat after browning is the most important step; it keeps all the flavor from the spices but gets rid of the grease.

Ingredients

  • 2 lbs ground beef or turkey
  • 1 1/2 Tbsp butter
  • 1 small yellow onion diced
  • 1/2 cup red bell pepper diced
  • 4-6 cloves garlic minced
  • 2 roma tomatoes seeds removed and diced
  • 1/4 cup tomato paste
  • 2 cups chicken or beef broth
  • 3 cups water
  • 2 cups canned beans black or kidney, rinsed and drained

Chili Seasoning Blend

  • 1 1/2 Tbsp + 1 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp cayenne pepper

For Garnish

  • Sour cream
  • Grated cheddar cheese

Instructions

  • Brown ground beef with chili seasoning in large skillet over medium-high heat.
  • Drain meat and set aside.
  • Sauté onions and peppers in butter for 3-4 minutes.
  • Add garlic and tomatoes, cook 2-3 minutes.
  • Stir in tomato paste and cook until darkened.
  • Pour in broth and water, add meat and beans.
  • Simmer 20 minutes until liquid reduces.
  • Top with sour cream and cheese before serving.

Notes

Can substitute turkey for beef. Adjust spice level by reducing cayenne pepper.
