Hot Spinach Artichoke Dip

Ingredients (~6 servings)

  • 6 oz cream cheese, softened
  • 3 Tbsp mayonnaise
  • 3/4 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 3 Tbsp finely chopped fresh basil
  • 3/4 tsp garlic powder
  • 1/2 tsp sea salt
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 1/2 cups raw spinach, roughly chopped
  • 3/4 cup grated Mozzarella cheese

Get Your Oven to 350F and Prep Your Dish

Preheat the oven to 350F with a rack in the center position.

Grab an 8×8 baking dish or any oven-safe skillet that’s roughly the same size.

Mix Everything Together

In a medium bowl, combine the cream cheese, mayo, Parmesan, garlic, basil, garlic powder, salt, artichoke hearts, spinach, and half the mozzarella (~6 Tbsp).

The cream cheese will be chunky at first but just keep mixing until it’s mostly smooth.

Some lumps are totally fine – they’ll melt out in the oven.

Bake Until Bubbly and Browned

Spread the mixture in an even layer in your baking dish.

Top with the remaining mozzarella and bake for ~30 minutes.

You’re looking for the cheese to be lightly browned on top and bubbling around the edges.

If the top isn’t browning after 30 minutes, bump the oven to 375F for the last 5-10 minutes.

Serve warm with crostini, crackers, or tortilla chips. This keeps in the fridge for up to 4 days and reheats perfectly in the microwave.

Hot Spinach Artichoke Dip

This is a basic spinach artichoke dip that uses stuff I always have around – cream cheese, spinach, and jarred artichokes. It’ll get demolished at any gathering and reheats perfectly fine the next day.

Instructions

  • Preheat oven to 350F.
  • Mix cream cheese, mayo, Parmesan, garlic, basil, garlic powder, salt, artichoke hearts, spinach, and half the mozzarella in a bowl until mostly smooth.
  • Spread mixture in 8×8 baking dish.
  • Top with remaining mozzarella.
  • Bake 30 minutes until cheese is lightly browned and bubbling.
  • If needed, increase oven to 375F for final 5-10 minutes to brown top.
  • Serve warm with crackers or chips.

Notes

Keeps refrigerated for 4 days and reheats well in microwave.
