These are soft sugar cookies with buttercream frosting - perfect for when you want something sweeter than regular sugar cookies but not as heavy as a cake.

Buttercream Frosting

butter
softened

powdered sugar

vanilla

1-2 Tbsp milk

gel food coloring

Instructions
Beat softened butter until creamy, then add sugar and beat until fluffy.
Mix in egg, vanilla, and sour cream until combined.
Add flour, cornstarch, baking powder, baking soda, and salt. Mix just until incorporated.
Form dough into a 4x6 inch rectangle, wrap in plastic, and refrigerate for 1 hour.
Preheat oven to 375F.
Roll chilled dough on floured surface to 1/4 inch thickness.
Cut with 2.5-3 inch round cutter and place on parchment-lined baking sheets.
Bake 7-9 minutes until bottoms just begin to darken.
Cool completely on wire rack.
Beat softened butter until smooth, then mix in powdered sugar and vanilla.
Add 1-2 tablespoons milk until frosting is smooth and spreadable.
Add food coloring if desired.
Spread frosting on cooled cookies and top with sprinkles immediately.
Notes
Dough can be re-rolled once. Don't overbake - cookies should not brown on top.
