Lofthouse Cookies

These are soft sugar cookies with buttercream frosting - perfect for when you want something sweeter than regular sugar cookies but not as heavy as a cake.

Ingredients

Ingredients (~12 cookies)

  • 1/2 cup salted butter softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup sour cream
  • 1 1/2 cups flour
  • 1 1/2 tsp cornstarch
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Buttercream Frosting

  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla
  • 1-2 Tbsp milk
  • gel food coloring optional
  • sprinkles optional

Instructions

  • Beat softened butter until creamy, then add sugar and beat until fluffy.
  • Mix in egg, vanilla, and sour cream until combined.
  • Add flour, cornstarch, baking powder, baking soda, and salt. Mix just until incorporated.
  • Form dough into a 4x6 inch rectangle, wrap in plastic, and refrigerate for 1 hour.
  • Preheat oven to 375F.
  • Roll chilled dough on floured surface to 1/4 inch thickness.
  • Cut with 2.5-3 inch round cutter and place on parchment-lined baking sheets.
  • Bake 7-9 minutes until bottoms just begin to darken.
  • Cool completely on wire rack.
  • Beat softened butter until smooth, then mix in powdered sugar and vanilla.
  • Add 1-2 tablespoons milk until frosting is smooth and spreadable.
  • Add food coloring if desired.
  • Spread frosting on cooled cookies and top with sprinkles immediately.

Notes

Dough can be re-rolled once. Don't overbake - cookies should not brown on top.
