Garlic Butter Pasta

This is one of those dishes you can make when there's almost nothing in the kitchen - just pasta, butter, garlic, and some cheese. It takes about 15 minutes and costs maybe $3 to feed everyone.

Ingredients

Ingredients (~6 servings)

  • 12 oz pasta spaghetti or whatever long noodles you have
  • 1/3 cup butter salted
  • 2 cloves garlic minced
  • 3/4 cup parmesan cheese freshly grated, plus more for serving
  • Salt and pepper to taste
  • 1 1/2 tsp fresh parsley chopped

Instructions

  • Bring salted water to a boil and cook pasta until al dente, about 8-10 minutes.
  • Reserve 1 1/2 cups pasta water before draining.
  • While pasta cooks, melt butter in a large pan over low heat.
  • Add garlic and cook until fragrant, 30-45 seconds, then turn off heat.
  • Drain pasta and add to pan with garlic butter, tossing to coat.
  • Add parmesan and toss again.
  • Add reserved pasta water 1/4 cup at a time, tossing until sauce is glossy and silky.
  • Season with salt and pepper to taste.
  • Top with parsley and extra parmesan, then serve immediately.

Notes

Pasta water and cheese are salty, so season carefully.
