leeks
white and light green parts, chopped

yellow onion
chopped

chicken or vegetable stock

fresh shelled peas
or one 10-oz package frozen peas

fresh spinach

kosher salt

fresh ground black pepper

creme fraiche
▢

chives

Instructions
Heat olive oil and butter in large pot over medium-low heat. Sauté leeks and onions until tender, about 5-10 minutes.
Add stock, bring to boil. Add peas and spinach, cook 3-5 minutes until tender.
Remove from heat, season with salt and pepper.
Purée soup in blender until smooth. Return to pot.
Whisk in creme fraiche and chives. Taste and adjust seasoning.
Serve immediately with optional croutons.
Notes
Use a standard blender for smoothest texture.
