Fresh Pea Soup

Cooking the peas and spinach for only a few minutes is the key step to keep their vibrant color and light flavor.

Ingredients

  • 1 1/2 tsp unsalted butter
  • 1 1/2 tsp olive oil
  • 1 cup leeks white and light green parts, chopped
  • 1/2 cup yellow onion chopped
  • 2 cups chicken or vegetable stock
  • 2 1/2 cups fresh shelled peas or one 10-oz package frozen peas
  • 1/2 cup fresh spinach
  • 1 tsp kosher salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 cup creme fraiche
  • 2 Tbsp chives chopped
  • Croutons optional, for serving

Instructions

  • Heat olive oil and butter in large pot over medium-low heat. Sauté leeks and onions until tender, about 5-10 minutes.
  • Add stock, bring to boil. Add peas and spinach, cook 3-5 minutes until tender.
  • Remove from heat, season with salt and pepper.
  • Purée soup in blender until smooth. Return to pot.
  • Whisk in creme fraiche and chives. Taste and adjust seasoning.
  • Serve immediately with optional croutons.

Notes

Use a standard blender for smoothest texture.
