Creamy Buffalo Cauliflower Soup

This is a creamy, pureed cauliflower soup with the flavor of buffalo wings. It’s made with a base of sauteed aromatics, cauliflower, and vegetable broth, and finished with cheddar cheese and buffalo sauce.

Ingredients

Ingredients (6 servings)

  • 1 1/2 Tbsp olive oil
  • 4 1/2 Tbsp unsalted butter divided
  • 1 large sweet onion finely diced
  • 3 cloves garlic minced
  • 3/4 tsp salt
  • 3/4 tsp freshly ground black pepper
  • 1 large head of cauliflower chopped into florets
  • 4 1/2 cups low-sodium vegetable broth
  • 3/4 cup half-and-half or whole milk
  • 1/2 cup buffalo wing sauce plus more for drizzling
  • 1 cup freshly grated sharp white cheddar cheese

For Garnish

  • Sliced scallions
  • Chopped chives
  • Crumbled blue cheese

Instructions

  • Heat olive oil and 1.5 tbsp butter in large pot over medium heat.
  • Add onion, salt, pepper and cook 5 minutes until softened.
  • Add garlic and cook 1 minute.
  • Add cauliflower and broth, bring to simmer, cover and cook 20-25 minutes until tender.
  • Transfer to blender and puree until smooth.
  • Return soup to pot over low heat.
  • Stir in remaining 3 tbsp butter and half-and-half.
  • Add buffalo wing sauce and cook 10 minutes.
  • Stir in cheddar cheese until melted.
  • Top with scallions, chives, and blue cheese.

Notes

Adjust seasoning with extra salt, pepper, or wing sauce to taste.
