Creamy Buffalo Cauliflower Soup
This is a creamy, pureed cauliflower soup with the flavor of buffalo wings. It’s made with a base of sauteed aromatics, cauliflower, and vegetable broth, and finished with cheddar cheese and buffalo sauce.

large head of cauliflower
chopped into florets

low-sodium vegetable broth

half-and-half or whole milk

buffalo wing sauce
plus more for drizzling

freshly grated sharp white cheddar cheese
For Garnish

Instructions
Heat olive oil and 1.5 tbsp butter in large pot over medium heat.
Add onion, salt, pepper and cook 5 minutes until softened.
Add garlic and cook 1 minute.
Add cauliflower and broth, bring to simmer, cover and cook 20-25 minutes until tender.
Transfer to blender and puree until smooth.
Return soup to pot over low heat.
Stir in remaining 3 tbsp butter and half-and-half.
Add buffalo wing sauce and cook 10 minutes.
Stir in cheddar cheese until melted.
Top with scallions, chives, and blue cheese.
Notes
Adjust seasoning with extra salt, pepper, or wing sauce to taste.
