Oreo Blondies

  • 1 cup + 2 Tbsp (146g) all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup + 2 Tbsp (142g) unsalted butter, melted
  • 1 1/4 cups (250g) granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 tsp vanilla extract
  • 12 Oreo cookies, coarsely crushed

Make the Batter and Bake at 350F for ~35 Minutes

Preheat your oven to 350F. Line an 8×8-inch pan with parchment paper, leaving some overhang to lift the blondies out later.

In a bowl, whisk together the all-purpose flour, baking powder, and salt.

In a separate large bowl, whisk the melted butter and granulated sugar together until the sugar is fully absorbed and the mixture looks glossy; this will take about a minute of steady whisking. Add the eggs one at a time, mixing gently after each one, then whisk in the vanilla extract.

Add the dry ingredients to the wet ingredients and fold them together until just combined. Fold in most of the crushed Oreos, saving a handful to sprinkle on top.

Pour the batter into the prepared pan and spread it evenly. Sprinkle the remaining Oreos over the surface.

Bake for ~35-40 minutes. The edges should be set, and a toothpick inserted into the center should come out with moist crumbs attached. Let the blondies cool completely in the pan before slicing.

  • Cool completely in pan before slicing.
